A little while ago, Miyoko’s Kitchen contacted me to to create a couple recipes with their vegan cheese, and I envisioned a healthy(ish), colorful meatball sub! Mike and I had just started dating and he was the biggest fan of Friends I had ever met. Let’s just say I’ve seen the “Joey doesn’t share food” episode a few times over.
Joey’s love for meatball subs may have also inspired my recipe.
My friend Vince Lia came over to Mike’s apartment in Santa Monica and we made a meatball sub recipe video together!
Fresh arugula, pickled red onions, meatballs simmered in marinara and Miyoko’s mozzarella melted onto a baguette – I wish I had one right now!
