Last fall, I was asked by Miyoko’s Creamery to develop a healthy recipe using their vegan cheese product! Mike had told me about the nutritional benefits of sweet potatoes, especially important for runners, and so I made this recipe with him as my muse. He also gets photography credit! I was trying to come up with a variation on potato skins using filling and satisfying ingredients that were on the more mutrient dense side with an air of decadence!
