Recipe Review: Vegan Yack Attack’s Roasted Tomato Cauliflower Soup

You know what I’m not a huge fan of? Tomato soup — to me it’s like eating a bowl of marinara, I just don’t get it. What I am a huge fan of though are chunky tomato soups – add some veggies, beans, greens and I am all for it! Minestrone soup is one of my all time faves, and the only reason (besides the breadsticks) you’ll find me in an Olive Garden! My family and I used to spend a lot of time at Olive Garden, because it was the restaurant we went to for birthday celebrations, so minestrone soup always brings up those fun memories!

Pair this soup with a grilled cheese sandwich and feel free to thank me later!

That’s one of the reasons I like Jackie’s soup so much, it reminds me of good times spent with family! I started making it when she published the recipe on her blog, Vegan Yack Attack, back in 2013, and I was living in San Francisco. I made it for my mom, dad and grandma, and now everyone is as obsessed with it as me! In the last month I’ve made it twice. What can I say? It’s simple, quick and super flavorful! And if you make a huge pot of it, it’s like all-you-can-eat style at a certain Italian chain frequently mentioned above!
